Here’s a hearty and flavorful Mexican Lasagna 🌮🧀 — a layered Tex-Mex comfort dish that swaps out Italian pasta for tortillas and fills them with seasoned meat, beans, cheese, and salsa.

Ingredients (Serves 6–8)

  • 1 lb (450 g) ground beef (or ground turkey/chicken)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (or 2 tbsp homemade mix)
  • 1 cup (240 ml) salsa or enchilada sauce
  • 1 can (15 oz / 425 g) black beans, drained and rinsed
  • 1 cup (150 g) frozen corn
  • 8–10 medium flour or corn tortillas
  • 3 cups (340 g) shredded cheddar or Mexican blend cheese
