Crustless Coconut Pie

Instructions:

  1. Preheat Oven:
    Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish or a similar baking dish.
  2. Mix Ingredients:
    In a large mixing bowl, whisk together the flour, sugar, and salt.
    Add the eggs, milk, melted butter, and vanilla extract. Whisk until smooth.
    Stir in the shredded coconut until evenly distributed.
  3. Pour and Bake:
    Pour the batter into the prepared pie dish.
    Bake for 45–55 minutes, or until the top is golden brown and the center is set. A knife inserted near the center should come out clean.
  4. Cool:
    Let the pie cool completely before slicing. It will firm up as it cools.
  5. Serve:
    Enjoy as-is, or serve with a dollop of whipped cream or fresh fruit.

Storage:

Refrigerate leftovers for up to 4 days. Best served at room temperature or chilled.
