1. Preheat & Prep:
- Preheat oven to 350°F (175°C).
- Grease a medium baking dish (8×8 or similar).
2. Soak the Bread:
- In a large bowl, whisk together eggnog, milk, eggs, sugar, vanilla, spices, lemon zest, and salt.
- Stir in raisins and rum if using.
- Gently fold in bread cubes and let soak for 15–20 minutes.
3. Bake:
- Pour the mixture into the prepared baking dish.
- Bake for 40–50 minutes, or until the top is golden and the center is set (a knife should come out clean).
4. Cool & Serve:
- Let it cool slightly. Dust with powdered sugar before serving.

- 1 cup milk
- 1 tbsp cornstarch
- 2 tbsp sugar
- 1 tsp vanilla
- Pinch of salt
