Főzelék Hungarian 🇭🇺


👨‍🍳 Instructions:

  1. Sauté the onion:
    Heat oil or butter in a saucepan. Add the chopped onion and cook until translucent.
  2. Add peas:
    Stir in the green peas. Cook for a minute, then pour in the water or broth. Add bay leaf and sugar if using.
  3. Simmer:
    Cover and simmer until the peas are tender (about 10–15 minutes for fresh, 7–10 for frozen).
  4. Make the roux:
    In a separate bowl, whisk the flour into the milk until smooth.
  5. Thicken the főzelék:
    Slowly stir the flour-milk mixture into the peas while stirring constantly. Cook for 2–3 minutes until thickened. Season with salt and pepper.
  6. Finish and serve:
    Remove from heat. Add garlic (if using) and sprinkle with fresh herbs. Serve warm.

  • Top with a fried egg, sausage (like Debreceni), or meatballs.
  • Serve with crusty bread or pickles on the side.
