👩🍳 Instructions:
- Preheat oven to 180°C (350°F). Line a baking tray with parchment paper.
- Make the dough:
In a bowl, mix flour, powdered sugar, vanilla sugar, and salt.
Grate or cube cold butter into the flour mixture. Rub together with your hands until it forms coarse crumbs.
Add the egg yolk and knead into a soft dough. If it feels dry, add 1–2 tsp cold water. - Chill the dough in the fridge for 20–30 minutes.
- Roll out half the dough to fit a baking tray (around 20×30 cm). Spread a thin layer of jam over the dough.
- Grate the other half of the dough on top or crumble it evenly for a rustic look.
- Bake for 25–30 minutes or until golden on top.
- Cool completely, then dust generously with powdered sugar. Cut into squares or diamonds.
🫖 Serving tip:
Perfect for afternoon tea, holidays, or to accompany strong coffee. Keeps well in an airtight container for several days.
Would you like a jamless version too, or a walnut-filled variant like the one many grandmas made?
