Rakott Teszta (Hungarian Baked Dessert Noodles)🇭🇺


👨‍🍳 Instructions:

1. Cook the noodles:

  • Boil noodles in salted water until al dente.
  • Drain and set aside to cool slightly.

2. Prepare the filling:

  • In a large bowl, mix:
    • Cottage cheese
    • Egg yolks
    • Sugar
    • Vanilla
    • Lemon zest
    • Raisins (if using)

3. Whip the egg whites:

  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Gently fold them into the cheese mixture.

4. Combine:

  • Mix the cooled noodles with the cheese filling.
  • Fold gently until well combined.

5. Assemble & bake:

  • Preheat oven to 180°C / 350°F.
  • Grease a medium baking dish with butter.
  • Pour the noodle-cheese mixture into the dish and smooth the top.
  • Spoon the sour cream evenly over the surface.

6. Bake:

  • Bake for 35–40 minutes, until golden brown on top and slightly set.

🥄 To serve:

Let cool slightly. Serve warm or at room temperature, with extra sour cream or a dusting of powdered sugar. It’s also delicious cold the next day!

  • Add fruit jam layers (apricot or plum) between the noodles.
